<p />i guess i did it right. it took about 3:45 to hit 170 degrees.
i'm taking these to a party with a hunk of wisconsin cheese.[p]

    They started off as those 1 pound rolls of sausage that get rolled in a rub.[p]I personally like one of the maple flavored ones with a good salty rub on it then once cooked brush the slices with a grade B or C maple syrup.[p]Many also make their one and add some type of item like cheese and/or peppers to the inside.

  • bbqBob,[p]Bob makes a wonderful fattie and several years ago, took first place in the Ohio State BBQ Championship in Nelsonville, Ohio. I got to taste that sausage and it as well was made with maple flavor.[p]Dave

    Wow! Thanks Dave! Coming from you that was one heck of a wonderful compliment! Heck of a nice way to start out my morning![p]Glad you got to try that and glad I got to see you there! That one a heck of a contest![p]That sausage was cooked nicely and I'm glad those judges liked that maple flavor! [p]That sausage by the way cooked to 155 and allowed to rest some before slicing. After it was sliced it got brushed with the syrup.[p]I have a picture of that entry on my web site but I just noticed a typo with it. It shows a 4th place but it IS a 1st place entry. Still have the trophy in the other room to prove it (smiley thing here)![p]Dave thanks again for the compliment![p]Enjoy the day![p][p]

    last night as the fatties were diappearing, i thought about injecting with maple syrup prior to smoking...
    anyone tried that with sucess or does it just make a mess?

    I assume you make your own sausage. I haven't tried it but you could add some real maple syrup to the mix.[p]I'd suggest pan frying a small patty to check it for seasonings. If you like what you have take it to the egg or make adjustments as needed.[p]I'll often cook something like a sausage or meatball/loaf type of meat in a small patty to check on the general taste before taking it it's final destination. Hate to mess up a meal..[p]I'm sure you could inject the syrup in several areas with the right needle. I'd just pull the needle out as I push the plunger in so not to get too much of a pocket yet it's just sausage and either way will be good eating. Kind of like injecting other meats.[p]Or...even easier, use the already made maple sausages and add whatever you like to them.[p]Good luck! You meal you posted up above looks pretty darn good!     I don't know. Probably Wally World special, I haven't replaced my good set from the wreck yet.[p]Mike
