how to smoke a duck
I recently had smoked duck at a local resuraunt and it was incredible. I inherited my Dad's Big Green Egg when he passed away, so I thought, why not try it at home? Any ideas would be greatly appriciated.
This has been in the egging circle for years and have not heard of any negatives as of yet.
i stuffed my last one with orangees and onions and slow cooked it at 225 for about 4.5 hours following djm5x9 technique, but not spatchcked. came out great. skin crisped up nice. follows his guidance on duck and it wont be greasey like some of the roasted ducks ive had.
