Just got a wok for Mr. Big and need a few tips from the Eggsperts. We've done 'some' stirfrying on the stove in the past but, in truth, we weren't too thrilled with the results.
Been packing on a little too much flesh around the waist and have to do something healthy for a month or two.
Appreciate your help folks, thanks.[p]Carey

  • Sundown,
To get started just remove the cooking grid and light your BGE. Let it get to a temp of about 425 deg. open the dome and set the wok in the Egg on the fire ring. This is the only time we cook with the dome open as the wok is now the top damper. Let the wok heat a couple of minutes and splas a few drops of water in the wok. If they dance and steam away you are ready to add a table spoon of oil and start stir frying. Note bottom damper all the way open is a hot wok moving the damper half way shut should be a medium wok. You get the picture.
Here is a stir fry recipe from our recipe of the month. [p]Steve.....on woking in the Big Green Egg![p]We’ve had numerous e-mail inquiries about using a wok in the Big Green Egg
and for additional stir-fry recipes. So, we sent Steve outside — with
Marinade Bay Cooking/Grilling Sauces in hand — and told him not to return
until he perfected his stir-frying on the Big Green Egg. We think you’ll
enjoy these recipes![p]Orange Beef Stir-Fry[p]1 lb. beef steak
4 Tbsp. Marinade Bay Ginger Teriyaki cooking/grilling Sauce, divided
1-1/2 Tbsp. plus 1 tsp. cornstarch, divided
    1 clove garlic, minced
    1/2 tsp. crushed red pepper
1/2 tsp. grated fresh orange peel
    3 Tbsp. orange juice
    2 Tbsp. vegetable oil, divided
    1 medium carrot, julienne
3 green onions, cut into 2-inch lengths, separating whites from tops
hot cooked rice[p]Cut beef into thin strips; coat with mixture of 2 Tbsp. teriyaki sauce,
1-1/2 Tbsp. cornstarch and garlic. Let stand 15 minutes. Meanwhile, combine
remaining 2 Tbsp. teriyaki sauce, 1 tsp. cornstarch, crushed red pepper,
orange peel and juice and 1/4 c. water; set aside. Heat t Tbsp. oil in wok
over high heat. Add beef and stir-fry 2 minutes; remove. Reduce heat to
medium-high; heat remaining 1 Tbsp. oil in wok. Add carrot and white parts
of green onions; stir-fry 1 minute. Add green onion tops; stir-fry 30
seconds. Add beef and teriyaki sauce mixture. Cook, stirring, until sauce
boils and thickens, about 1 1/2 minutes. Serve with rice.[p]Pepper Beef Stir-fry[p]3/4 lb. boneless tender beef steak (sirloin, rib eye or top loin), 3/4 to 1
