Flounder ideas?

I just scored me a free trip to go flounder gigging so I'm expecting to have some to cook in a couple weeks. I've fried em, baked em, stuffed em, and grilled em, but have never egged em.

    ronbeaux,[p]My neighbor dropped off two flounder just a couple of hours ago. They are absolutely my favorite fish to cook. Amazing what a few dozen ABT's and a couple of beer butt chickens cast throughout the neighborhood will return. I got a cooler full of specs and reds delivered to my house the other day. Anyway, I fillet them and make a seafood stuffing. I lay the fillets out and spread the stuffing on them. Roll up the fillets and stand them on end in a baking pan and fill in between with the left over stuffing. Bake about 45 minutes. Baking on the egg should add some nice smoke flavor.

    Nice! I'm saving all tips. Apparently getting a limit of ten is no problem!
