Ah, Sweet Redemption

Why not follow up a crappy night with a perfect one? That was my hope anyway, and wished do come true.[p]Papa TRex had these suckers waiting for me when I got home:[p]11-3steaks-prepped.jpg[p]What do you think these guys needed? Well, a lava temp sear, of course:[p]11-3steaks-searing.jpg[p]After all that pain and suffering, we let them rest for 20 minutes:[p]11-3steaks-resting.jpg[p]After roasting, we served them up - I do have to say, some of the most tender and flavorful beef I've had in quite some time:[p]11-3steaks-done2.jpg[p]Hooray for comebacks![p](Tomorrow it's rib time, baby!)[p]Cheers,[p]TRex

    mad max beyond eggdome,[p]Just kosher salt and cracked pepper in that picture. I also added olive oil before taking them to the grill.[p]I'm still a purist when it comes to steaks. :->
