Looks great. Looks like it will actually be easier to slice than a usual tri-tip.

I picked up a nice 'Select' Tri-Tip that I got at Acquitaspace at a great price. It looked like Prime. Froze it for a Tri-Tip day. I plan to Sous Vide it like I did a few back in Texas. Here's the video of it. https://youtu.be/Y0EceX95D6c
Yours is more pretty, but I can assure you mine was tender and very flavorful. I think Sous-Vide takes it up a notch.
