Brisket Success

I have struggled with achieving juicy briskets, so I decided to order butcher paper based on many of your discussions. In the past, I’ve only ever smoked brisket flats since I can’t find any full briskets in my area. I was able to get my hands on a couple full packers while traveling though, and tested one out last night and wrapped the brisket in butcher paper at 170 IT. I’m sold.

Great cook. If you can't get packers locally, the internet is your friend. Alternatively, if you have a local butcher, they might be able to get them for you.
For me, the flat is what you feed your guests while you slice your way to the point.(now only 16 stone)
