    Steaks look nice.  Just curious - what advantage does the drying over night in the fridge have over just patting them down with a paper towel before they go on?

    It's a far cry from dry aging but it does pull some excess moisture from the meat. Especially the fat on the outside. I think it's worth the effort. But we all have different tastes.i just flipped them. The top dries faster.

    Great cook and result.  Beautiful cuts of beef.  
    Give the dry-brine; when to salt a steak/protein a look when you get a chance.  That plus any exposed fridge time will make a difference.  Definitely a flavor changer for me.   FWIW-
    Louisville; Rolling smoke in the neighbourhood. # 38 for the win.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period.

    I agree on the dry brine steak thing.
    This weekend is crazy and i was not sure when i was going to cook steaks.
    Afraid to commit to salting and seasoning this time. Your input is always appreciated!

    Photo Egg, I love your photos.  One comment, they are all about 10-14 MB in size.  That's pretty big.  Here is the same photo as above, except that my version is 250KB which is 2% (1/50th) of the size of yours.   Still really good resolution, and much faster to load when viewing.  Not complaining, just something to consider. 

    Actually, I downloaded my own pic and it downloaded as 622KB, which is really strange considering I uploaded it as a 257KB jpg.  Odd.

    I agree with you 100%. I have gotten in the bad habit of shooting with my phone and it does not give an option to download or insert a smaller resolution and honestly, I have been to lazy to send them to my computer or iPad to dummy them down first. I will work on a work around. 
    But I do appreciate the input. I know there are posts that I open on my phone that I know are higher res as soon as I click on them as the images all start as thin bands and slowly fill in. I normally just move to the next post. I'm sure others do the same with mine. And I will look into other options.
