Chuck Roast Recipe Needed

I'm somewhat of a newbie and would love a simple recipe on what to do with a piece of chuck roast that my wife has purchased!

    I have posted this before and I think you will enjoy the finished product.
    1 boneless chuck about 3/12 pounds
    2 tbls oil
    1 medium onion chopped
    1 small celery rib rib,chopped medium
    1 small carrot,chopped medium
    2 medium cloves garlic minced
    2 tsp sugar
    1 cup low sod chicken broth
    1 cup low sod beef broth
    1 sprig thyme or rosemary
    1-1/2 cups water
    1/4 cup red wine
    Brown roast on all sides about 8/10 minutes.
    saute onion,carrot and celery untill it starts to get brown
    about 7/8 min.
    add garlic and sugar adn cook about 40 seconds.
    Add chicken and beef broth and thyme/rosemary and scrape bottom of pan to loosen bits from pan.
    Add enough water to cover to come half way up the side of the roast
    Put in a dutch oven with a tight fitting lin or pit foil over the pot to make a good seal.
    Cook for 3/12 to 4 hours indirect.raised rack.
    If you want to add veggies,carots,potatoes etc. add to dutch oven submergineg them in the liquid and cook 20/30 minutes.

    Sorry about the third line from the bottom of the post.
    Should be a tight fitting lid or foil over the pot to make a good seal.Had first sample of Spaten Octoberfest tonight after a 14 hour day.Hope you enjoy it.It is fork tender and very moist.

    Sounds great. What temp do you like to use? 275-300?? Just guessing. TIA

    Do 300.The main thing in this dish is that most people dont cook it long enough.The extra hour of cooking breaks down the tissues in the meat and makes it, stick your finger in it,and it will fall apart.Let alone a knife or fork.
