My wife bought a pork loin roast... never have cooked one. Do I prep and cook like a regular pork loin? I've done plenty of loin cooks but this "roast" has a layer of fat on one side and is shaped more like a square. Do I rub it up good with some DP Red Eye Express and let 'er rip? Any suggestions would be appreciated...
