What's a good model of shears that l'll cut chicken and turkey bones no problem for spatchock? I owned a pair of tinsmith pliers that worked great but were overkill and hard to navigate through the meat.

Son has pair of AMCO shears, designed for turkey so chicken is easy. I have a set from Lee Valley I use for chicken, the big chef knife comes out for turkey.Delta B.C. - Whiskey and steak, because no good story ever started with someone having a salad!

I use a Wusthof 10" serrated bread knife. Never tried a turkey, but it works well on chicken. Easier to clean too.
I hate it when I go to the kitchen for food and all I find are ingredients!

I just use a pair of kitchen shears. Not sure of the brand - either Oxo or Kitchen Aid I think.

Any decent sharp and substantial knife or kitchen shears will take care of the chix. I use a sharpened hatchet on turkey (no adult beverages before this gig) and it makes it quite easy. At some point the hand-eye coordination will necessitate heavy duty shears for the turkey. But entertaining right now. fWIW-Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.

Mine cost $11 so right about 1/10th the list price of the Cutco "Super Shears as listed on their website @ $112.

I use Shun kitchen shears for chicken. They cut through pretty easily. For turkey I use hedge clippers (like I use when doing the lawn).

No - I was just being a smart ass! Actually I had a pair of cheapies that were advertised as being able to cut a penny in half. I ruined them trying to do so. I didn't have the wrist strength so I put one handle in a vise and used a hammer. They twisted and then bent! No way would I do that to my CUTCOs!HeavyG said:

Heavy SHARP knife for me is so much faster. Did I say SHARP!Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.
