greetings friends,
a regular size brisket trimmed and seasoned with 3oz each black pepper and garlic salt and 1oz paprika, going 225* over a water bath with garlic powder and red pepper flakes on top of mesquite chunks and Rockwood.

I run the temp at 225 and have the sucker over a water bath and the PS. Good looking out though.
The brisket is an excell from WALMART!! Lol
