So I've been following all the rib instructions lately and figured since it was my first baby backs I would give it a go. We loved this sauce flavor so much figured we would give her a go and they were fantastic. Nice heat! Thank you everyone for the knowledge provided. Went 3-1-1 method and they were perfect. Now for the results.

@TN_Sister_State - nailed that cook. Congrats. Great result. Even got a sweet ring.
Food for thought- I'm lazy and getting visually challenged from distance. So, I spin the dome thermo til the target temp is at 12 o' clock. That way a casual glance lets me know how the cook is trending.
If you go down this road just make sure the back of the thermo is not against the BGE when rotating as that could mess with the calibration nut. FWIW-
