There is not fat cap at all. The meat cutter really trimmed this up nice but got to have a little fat cap. I have been placing bacon on the top, any thoughts for the bottom? I'm thinking using 2 plate setters and a drip pan to really shield the heat.[p]

Car Wash Mike,
Put some water in the drip pan. Are you in Peculiar? I'm in Cleveland.

db,
Sure am. I was thinking apple juice/water mixture. Did you cook in Peculiars Summmerfest? It was a sanctioned event.[p]Mike
