Philly Cheese Steak

Our tailgate group wants to do Philly cheese steaks for the Texans first home game. I'm totally clueless about how to make them. Not sure what cut of meat you use.
Any help is appreciated.

    Here is on way.[p]Beef, Roast, Cheesesteaks, Philly

    I made pretty big batches so the quantities will be based on how much you want to make. On the Egg a cast iron skillet works great at about 325.
    [p]4 - lbs chip steak (my butcher shaves down top round for me)
    2 - large sweet onions, thinly sliced
    12- oz mushrooms, sliced
    1/2 lb american cheese
    rolls (if you can't get a real Philly steak roll use club rolls)
    Dizzy Pig Cowlick Steak Rub
    olive oil
    butter



    Saute onions in olive oil, remove from pan. Saute mushrooms in butter, remove from pan. Melt some more butter and the steak to the pan. Grill the steak until browned tearing it apart with two spatulas. Season with the Cowlick to taste. Add the onions and mushrooms back in and mix well. Cover the meat mixture with the american cheese, when melted use a spatula to put it in the roll.

    Try a big hunk of chuck roast or ribeye. Slice on slicer or have the butcher slice real thin for you. Get a cast iron skillet for grilling your meat, mushrooms, onions, & peppers. Use a small amount of butter to grill your meat and veggies. After sauting combine the veggies and meat together in a small pile & season with a seasoned salt. Put a couple of slices of provolone on top to melt. Use a nice crusty roll with either mayo, spicy mustard or marinara sauce. Put your sliced roll on top of the meat and scoop up with a spatula. You will be in Philly heaven. Good luck, Tom

    This is from Pat's in Philly[p]Serves 4[p]24oz thin sliced rib eye or eye roll steak[p]6 table spoons of Soya bean oil[p]Cheese {we recommend Cheez Whiz®} American or Provolone works fine[p]4 crusty Italian Rolls[p]1 large Spanish onion[p]Optional[p]sweet green and red peppers sautéed in oil[p]Mushrooms sautéed in oil[p]Assembly[p]Heat an iron skillet or a non stick pan over medium heat[p]add3 table spoons of oil to the pan and sauté the onions to desired doneness[p]remove the onions[p]add the remaining oil and sauté the slices of meat quickly on both sides [p]melt the cheez Whiz® in a double boiler or in the microwave[p]place 6oz. of the meat into the rolls [p]add onions, and pour the Cheez Whiz® over top[p]garnish with hot or fried sweet peppers, mushrooms, ketchup[p]Put on the theme song to the first Rocky movie and enjoy![p]
