Tonight's Dinner (w/ pics)

Keeping the momentum going (since I'm headed back to hotel life on Tuesday), my dad and I hit the Egg one more time for a nice dinner.[p]But first, the appetizer: insulata caprese made with some fresh ingredients from the local Fresh Market:[p]insulatacaprese1.jpg[p]We also stumbled upon a 3.5 lb standing rib roast and just couldn't pass it up.[p]After roughly 2 hours indirect at 275, here she is at an internal temp of 130:[p]augustaprimeonegg.jpg[p]After resting off the Egg for about 15 minutes, here she is sliced at an internal of about 135:[p]augustaprimesliced.jpg[p]And then here's the rib roast plated with fresh corn, green beans, and crusty bread.[p]augustaprimeserved.jpg[p]Overall an excellent meal.[p]Cheers,[p]TRex
