<p />A trip to the local farmers' market on Saturday yielded a nice free range chicken and some 'hand made' butter. I decided to try the high temp indirect approach that mad max beyong eggdome discussed in a recent post. [p]I kept the seasoning to a simple salt/cracked pepper sprinkle and cooked it at 450 and basted with the pan drippings. It was, without a doubt,the best-tasting most succulent chicken we have ever had. [p]Thanks for describing the high temp/indirect process mad max.I'll try the souffle next time!
