Baked Beans

Options
Soaked the dry beans for 12-13 hours
Drained and refilled with enough water to cover
Got to boil than simmered for 60-75 minutes
Added all the good stuff and put on Egg at 275 for over 4 hours
beans are still on the hard side , is that normal
how long should I expect to cook them (7-8 hours)?

    I usually boil navy beans for 30-45 minutes and then bake them at 250F for 3 hours covered and 4 hours uncovered.

    Sometimes beans will never end up tender. It depends on the growing conditions. Too dry  environment means the beans can't ever be tender.

    And sometimes its because the beans were old. While they remain edible for years, they won't be so palatable after a year.

    The soaking water is important. I have a hard water supply to my house. Soaked beans don't work so well from tap water. So I use distilled.

    I've read that adding baking soda too the soak and/or cook also helps. Haven't tired it myself, as many report too much adds a soapy flavor.

    Adzuki     16 to 21
    Black     22 to 25
    Black-Eyed Peas     6 to 8
    Cannellini     28 to 32
    Cranberry     28 to 34
    Flageolet     28 to 34
    Garbanzos     32 to 35
    Great Northern     25 to 30
    Lentils      (brown or french green)      1 to 5     (1 minute high pressure, then 8 minutes natural release, then quick release)
    Lentils     (red)     5 (quick release)
    Lima     (large)     9 to 10
    Lima     (baby)     13 to 15
    Navy     (pea)     22 to 25
    Peas     (split, green or yellow)     10 to 12
    Pinto     19 to 22
    Red Kidney     25 to 30
    Romano     25 to 30
    Small red beans     26 to 30
    Soybeans     (beige)     28 to 35
    Soybeans     (black)     32 to 37

    Cook beans for above times - no overnight soaking required.  I can't remember the last time I did the overnight soak routine.

    I LOVE my pressure cooker! Have a pot of "baked" beans on right now, finishing as I type this. Total cook time under pressure, 25 min, then add all the stuff that makes them taste like baked beans and back under pressure for 15 min more. Tender and tasty in no time at all.

    I hate it when I go to the kitchen for food and all I find are ingredients!

    I recently purchased an Instant Pot (electric pressure cooker) and I love it.  I made beans with it twice in under an hour for the whole process.  They still recommend soaking the beans.  They have recipes without soaking and recipes with a two steps process to emulate soaking.  I have tried both methods and they tasted great, almost as good as my traditional way of baking them.  However, the effect on my body was terrible... 

    I did some research and the purpose of soaking is to get rid of anti-nutrients such as phytic acid and enzyme inhibitors that are causing you gas, heartburn, reflux and whatever other digestive ills...

    I will definitely try again but I will soak the beans first.

    Interesting, but I have experienced none of those problems. Not even gas. I used to forget to soak and so, did not always have beans when I wanted them. Now, with the PC, it doesn't matter. 

    I use a stovetop PC, not an electric. Wonder if the higher pressure is what makes the difference.

    You can use the pressure to do a quick soak if you want.  Then cook. Sounds like the Instant Pot two step approach.  If you plan ahead then soaking works fine.  I like the option of being able to get beans cooked even if not planned out the day before.

    I never soak beans. You just need to add 45 minutes to an hour of cook time to the whole process.

    They Cooked  for about 12 hours and are amazing. can't wait to see that the fans think during the SB party. Thanks for all the help. I have been crazy all day with brisket, ribs, chicken thighs, sauces, rubs, burnt ends.  I LOVE MY EGG and so do my SB Friends

    Well the SB party has ended and the fans all agree these were some of the best beans they have ever tried.  Did the Apple Smoked maple syrup baked beans from a post by paqman
    Thanks for the post, I tweaked it for my needs and it was a big hit.  Only problem I have lots leftover - wonder can I freeze them for down the road.

    the baking soda works in a pinch if you didnt remember to soak overnight. the trick is a low simmer for an hour or two with the soda and then thoroughly rinse them before making the beans. salt keeps them hard, if your tap water isnt working to soften them , hold back with any salt products for the first part of the cook. my househas city water, i need to soak and later add the soda, rinse, and then bake. my last house was in a different city on city water and it soda was not needed
