Flat Iron Steak!

What a wonderfully, relatively inexpensive, quick dinner meat! I sent my wife to the grocery store for a flat iron or london broil. She called and didn't like the LB, so she picked up the more expensive Flat Iron. I dried it, coated with evoo, and then seasoned with KC steak seasoning. Let it sit to room temp for 2 hours and got the egg up to temp. Cooked at 550* for 4 minutes a side. It was a perfect 125* when I pulled it, and perfectly pink in the center. Very tasty and cut across the grain. What a quick, delicious and wonderful dinner! Just thought I'd share!

When it's done right, it's hard to beat a Flat Iron! The only problem here in NC is finding them!

I agree 100%. We have flat iron steak about once a week here. I even take some for lunch if there is any left or any that will last til the next day that is!

Sounds great! It won't be long before flat iron steaks are priced like tenderloins. I think it is truly one of the best steaks you can cook. Especially if you get a well marbled one. That's good stuff. You got a camera? I wanna see that thang!

Nothing wrong with relatively inexpensive. Add a couple twice baked taters and a little cheap bottle of Runite. Good to go.
I ususally buy them by the case.

You're right, they are good for a quick meal and they are versatile.
I use them for fajitas or I dice them and use them in chili.
Great flavor, tender, and usually inexpensive. When they go on sale under $4/lb I stock up. -
Flat irons rock, I like them cooked on the well side, I think it really pulls the flavor out.

I just finished this one up a few ago. Rubbed with a combo of raising the steak and jamaican firewalk. I have even just went simple salt and pepper and they are just great either wich way you go.

I love flat irons. I sprinkle heavy with kosher salt, garlic powder, a little black powder and maybe something else if I feel like it. I grill them direct heat until they feel medium rare. Really good and quick!
