Today's Turbo Butt Cook

As I had stated earlier I cooked two butts today going turbo at 325.
I pulled the first one at 194 and wrapped it in aluminum foil then a towel and stuffed into the microwave (off of course) to rest. I will slice it later this evening.
The larger one is still on the egg as I plan to pull it.

For those using a FlameBoss with a SmokeWare cap this is how I had the SW set up.

Once the FB settled in the pit temp it stayed within plus or minus 3 degrees of the 325 temp I set. after removing on butt the temp went a little high but I'm confident that it will correct itself.
It is starting to look like the meat probe is acting up again. But I'll wait and see.
There was no stall at all with this cook. looking at the graph it was a continuous upward climb on the meat until I pulled the first butt.Marshall in Beautiful Fruit Cove, FL.

Tried slicing the first butt but that didn't go too well though it tasted amazing. Perhaps I should wait until it cools some more or maybe pull it at a lower temp next time.

194, then wrapped and secured gave you a good bit of carryover cooking. It's not your knife. Pull it earlier 180-85 and it should chop or slice. Still good eats.Sandy Springs & Dawsonville Ga

Look at how consistent the FlameBoss 200 held the pit temp. Once it came up and slightly overshot my starting temp of 300. I bumped the temp to 325 for the remainder of the cook. The first drop off is when I was swapping probes to see if the problem was the meat probe or the circuit board. The other downward blip is when I removed the first butt then you see the end of the cook when I removed the probes.
I am very impressed with the FB200.
The blue line is the set temp and the red is the actual pit temp.

Very nice. I have had good luck with slicing pork at internal of about 175. The foodsaver makes leftovers easy to save, store and enjoy later.

DId my first Turbo Butt last weekend. Seemed to render more fat and was much less greasy than low and slow. Will only Turbo from now on.

I think I'll only turbo from now on too. I just don't like all the waiting and stress with pulling off a low 'n slow in time for dinner. Also the egg seems to settle into the 300 degree range easier.Marshall in Beautiful Fruit Cove, FL.

I like the turbo method and think it works just fine. But there are times I just want to low and slow and chill while I drink a couple or so. Great Job BTW.
