Been wanting to do this. What does everyone use for a pan? Does it need air holes in it for the smoke or do you just dump it on a cookie sheet.

I use a cheap splatter screen and lay the salt out in an even layer. Mix it around ever couple hours.Northern VA - LBGE

Just a cookie sheet has worked fine. You could double stack your cookie sheets and smoke some water as well (refreeze for bourbon or bloodie marys).
@Chubbs I'm going to smoke some ketchup as you mentioned - just put it in a dish? stir it once in a while?
