Great Ribs, and then a Question About South African Braais...

We have a new nanny coming to live with us from South Africa, and I'd like her first meal with us to be a braai-inspired smoke/bbq/grilling.

Do any of you have any experience or knowledge of traditional South African Afrikaaner braais? I generally use a Big Green Egg, but I've also got a Pit Barrel Cooker as well.

Any and all comments or suggestions appreciated!

I thought I'd post yesterday's pork ribs as well. They were some of the best looking and best tasting ribs I've ever done. I followed Meathead's Last Meal Ribs recipe, including making the Memphis Dust. Only mod I did was spritzing them ever 30 mins after the initial bark set with a mix of apple cider vinegar, Texas Pete, and water. It was a real winner!
