Was my wife's birthday, thanks to those with suggestions.

Woke up at 5am and fired up both eggs. 

Seared the 5lb chuck on the mini

Then it went on the large at 250 until 160 internal.

At that point I foiled and poured some Guinness extra stout in for the braise until internal was 210.

Pulled and thrown on buns with provolone cheese and aujus. 

Paired with its green rice and crescent rolls.
