A brisket I'm not going to eat

Wife had a stomach virus 10 days ago, the boy got it 5 days ago, and I got it this morning about an hour after I put the brisket on.

So unless I can recover fully in about the next 12 hours, no brisket for me today.

I got a foodsaver for Christmas so it will be put to good use.  Any tips on best way to vac seal?
