We all know the 3-2-1 method for ribs ... how about 3-2-6-1?

Options

I'm making 8 racks of spares for my NYE party tomorrow and I have a large BGE.  I love the 3-2-1 method but I can't fit more than 4 racks on my Egg, so I'll do 4 racks at a time.

For the first round I'll do the 3 hrs on a rib rack, then 2 hrs in HDAF, then to maintain texture I was going to pull round 1 and allow them to cool.  Then, begin round 2 with 4 racks and do the usual 3-2-1 method and serve, and once these are pulled I would return the round 1 ribs to the Egg for the final hour.

Does it sound like this would work?  Or does anyone have a better suggestion?

Thanks!!
