Do you cut the fat cap off a butt when its finished cooking? I felt like I had too much fat in my pulled pork.

Trim it first, then you'll have no issue. Leave some, about 1/4".Sandy Springs & Dawsonville Ga

Trim to 1/4 inch or so before you put on your rub. Then if cooking until done the majority of the remaining fat should render nicely.Columbia, SC --- LBGE 2011 -- MINI BGE 2013

As with most things BGE, many approaches. Next time try with less cap and see how it goes. Just cook til the bone pulls clean.
