Future DIL is a vegiterian......don't let anyone tell you.....

....you can't prepare a nice meal for them on an egg. While largely a carnavore myself, sometimes you have to play to the audience. A few pictures as I went along. 
On the egg.....it went

Served with salad and some grilled bread. Thanks for looking.

    You're a good dad. I'd have had to sneak some meat in there some how. If
    nothing more than frying the veggies in bacon grease first. Just so I could
    amile a little wider at the dinner table.  =)

    If you really want to wow her try a lentil or bean recipe on the egg.You might just wow yourself.

    Just substitute the egg (as low as you can get it) for a slow cooker.

    Looks good!! My daughter is a vegetarian I actually enjoy finding dishes to make her. Here is one that she loves I substitute it for hamburgers and have even made it with BBQ sauce and a little smoke to substitute ribs.

    Our daughter was a sworn vegetarian, until I made a peach perserve butt. Now it is her favorite thing I cook.

    Looks yum!  We eat veggie one day or two a week.  Vegan would not be fun, but vegetarian is yummy.

    Sauce

    In a sauce pan pour a generous amount of olive oil (couple tbs)
    Add fresh garlic or jarred garlic if you prefer (i go heavy....prob 2 Tbs.)
    Heat on low to infuse the oil...don't fry the garlic
    Add 2or 3 cans of stewed tomatoes (straight up...not Italian flavor) 3 cans of large Eggo
    Allow it to come up to a light bubble and add some flour to thicken (tablespoon to start...and then add as needed. (consistency should be slightly thickened....(not past like)
    Add one tablespoon of Paprika and one table spoon of basil (fresh or dried)
    Simmer for 10 - 15 and remove from heat.

    Take a couple of medium sized eggplants and cut into 1/2 inch piecies 
    Add to boiling water for 10 minutes
    Remove and run cold water over them to stop cooking (drain)

    Assembly:
    • Spray a lite coat of olive oil on the bottom / sides of cast iron casserole (you will build this in layers like Lasagna)
    • Place a small amount of sauce in the bottom
    • Add half of the eggplant 
    • Top with half the remaining sauce
    • Add a generous amount of shredded mozz  
    • Add the remainder of the eggplant, and sauce
    • You will top off with grated (i grate myself usually) Parmesan Cheese
    Cooking
    • Prepare the egg for 375 indirect with a pizza stone
    • Set the cast iron on the stone with out the lid
    • Cook for about 30 min to 155 internal
    • Pull, cover and let rest for about 10-15 min.
    Enjoy with some grilled garlic bread ;)
