Newbie Q- cooking 10lb turkey

For my second cook, I'm going to take a stab at a 10-12 lb turkey.[p]THe family likes a crisp skin- apple smoked ( I did it on the old weber)[p]CAn I cook it direct in a foil pan? Will it brown ok? Any recipes? [p]Thanks a bunch.
