There are so many recipes out there, it's probably a good idea to narrow it down.
Type of protein?
Beans or no beans?
How spicy?
Simple or "Fancy"?
Some of the best I ever had was made with Tri tip. He had cut up steaks to baby-fingertip size for the sear.
I like beans, usually a mix of 2-3 types.
I happen to like sweet onion, but many prefer red.
For spice, fresh, high quality Chili powder, plus I like to add canned chilis. There are some that are sold frozen at Costco's in the ABQ area that I LOVE.
I like Cumin.
I happen to prefer S&W canned tomatoes.
Extras if you want them, but I'm not a huge fan (celery near the end for a little extra crispness is about as far as I go).
Adjust ratios to your own preference.
Cook it all in a Cast Iron DO on the Egg.
Allow enough time with the lid off at some point to get a bit more smoke flavor if you are so inclined.South SLO County -
Google "Wild Card Chili". It's a recipe I've been enjoying for years from a '70's Marlboro Country Cookbook. I toned down the heat a tad, and always make a double batch so I have some for the freezer. On cold winter days, a refrigerator as big as all outdoors is just beyond the slider to the deck, so I take advantage of it to cool whatever I've cooked while not stressing the fridge. As for the chili, I find that a jar of roasted, red peppers is a nice addition. Enjoy!!~~
