Smoked up a 3.25 lb chuckie in the Mini with rum barrel wood, pulled and diced at 190 deg f IT. Then added that and the smoky drippings to a CI DO with Jimmy Dean sausage, onions, crushed maters, diced maters, beef broth, beer, masa harina, seasonings, etc etc...
Prolly my best chili to date. Didn't add any beans this time, so I guess even my TX friends would call this chili.

Looks awesome! I like you thoughts with the Chuckie in the chili"The pig is an amazing animal. You feed a pig an apple and it makes bacon. Let's see Michael Phelps do that" - Jim Gaffigan

Looks great!
Quick question? When you go indirect on the mini do you just wrap the stone with foil or do you have some sort of actual drip pan that fits the mini woo?___________________________________

Don't know what your TX friends would call it....I would call it "Not enough in my bowl" Chili. Looks awesome!"Knowledge is Good" - Emil Faber

Thx guys! @shtgunal3, it is just a pizza stone wrapped in foil. There isn't really any room for a drip pan between the stone and grate on the mini woo.

That's a great looking pot of red chili! Did you use the masa to thicken the chili or for added flavor? Sounds interesting.
Any road will take you there if you don't know where you're going.

Nice. Looks a whole lot better than the pizza we ordered last night, but after 6+ hrs on the road, I wasn't firing up an Egg or cooking anything.

Saw your title and really hoped that you would be smoking the chili on the Mini. That would have been a sight to see.
Nonetheless, great cook!! -
That chili looks awesome! Thanks for the share...
