Beef Tenderloin on the MiniMax

Went to costco and picked up a choice tenderloin. BIL is back in the states from Ghana, and the meat selection is not great there. They have skinny cows, little flavor, and tough to chew, and that is the top grade, I am told.
So I thought tonight, I would make him a meal of the great beef we are fortunate to have in Kentucky.
I will update the thread as we progress, we are having some wine right now, so it could be a while......

Somewhat disappointed in the cut we got. I had to trim it almost like a brisket.
