Southwestern Egg Rolls

Options
Mixed up some leftover egged chicken with red pepper, green onion, garlic, black beans, jalapeño,roasted corn, cumin and ancho powder.  This was done on the cooktop.

Rolled up into egg rolls and on the large indirect with the pizza stone on the woo extender at 425
for about 20 mins. Turned halfway. No egg pic. I'm slipping

Just pulled from egg

Plated with sone avocado and a dipping sauce made with soy, rice wine, fresh ginger, fish sauce, red pepper flakes and sesame oil.

Egg rolls were most excellent and the sauce had a nice zing to it.  Thanks for looking.

I like cooking the egg rolls on the egg and avoiding frying in oil. Great cook as always. Looks like I get to steal another one from you...

    Looks fantastic and great inspiration!!

Do you brush the rolls with oil or anything before putting them on the egg?  I like that idea a lot.  I've always deep fried them but if they can be done as well on the egg it seems simpler and less mess and that's good with me.

Wanted to give this a bump as I made them over the weekend.  Delicious as always.  I made a jalapeno ranch dipping sauce that was killer.  Equal parts mayo (Duke's duh) and sour cream.  Chopped a jalapeno, then mixed in some hidden valley ranch seasoning, garlic salt, and Meat Church Holy Voodoo.  Here is the only photo I got which was the day before when I was prepping the filling.
