Honey Sriracha Wings

What to eat on the first NFL Sunday of the season? Wings, of course.
Been in the fridge uncovered since Friday night to dry the skin out. Rubbed with Mad Hunky Hot Whang and then on the small egg indirect around 275* to start. Rockwood lump with pecan chips for smoke.



Temps climbed to 400* over the course of the next hour and a bit until I checked them. They were pretty much done.


Mixed up a sauce with equal parts Sriracha, honey, and butter. Tasted it and then added a decent unmeasured amount of more Sriracha and brought to a simmer. Dunked the wings in the sauce and back on the egg.




Let the sauce set up for 5-10 minutes and they were done.



Pretty good wings, skin was still pretty crispy, even with the sauce.

    I've got wings waiting in the fridge and was thinking of something different. I think I'll try this sauce, sounds great.

    Here's a version of the honey Sriracha sauce that I use quite often:

    Sriracha wing sauce  (~2 lbs of wings)

       •     For the Sauce:

       •     5 tablespoons unsalted butter

       •     1/3 cup honey, plus more for drizzling

       •     1/4 cup Sriracha (Asian chile sauce)

       •     1 tablespoon soy sauce

       •     2 teaspoons fresh lime juice

    Obviously you can cheat on the fresh lime juice and dial the Sriracha to get the zip you are looking for.

    BTW- @DMW -  a true banquet right there.  

    Louisville; Rolling smoke in the neighbourhood. # 38 for the win.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period.

    Nice and crispy, which was nice. Usually when I sauce them the skin loses any crisp it may have had.

    I've seen many posts that had the same problem you had.  I see the second batch, thanks for reposting them!

    And BTW, I've never had trouble posting pictures, and I hate photo bucket, and won't use it.  You do whatever you like but no, you do NOT "need" to start using Photobucket!
