Hickory Smoked Pulled Pork Grilled Cheese

I was visiting the Jack Daniels Distillery the other day ( I highly recommend the tour, it is interesting and a good time) and stopped in Barrell House BBQ down the street. He was featured on BBQ Pitmasters a few years back and I wanted to try his specialty pulled pork grilled cheese. It was great, I tried my own recreation today with a butt I smoked yesterday.

finely chop pulled pork
finely chop red onion
melt butter and brush the bread
hand mix pork/onion... put on bread
3 slices of Boars Head Three Pepper Cheese (adds a great kick)
add pickles and sauce of choice, I used some sweet baby ray's.
5 minutes per side and you're done.

I can't remember the last sandwich I made that hit the spot like this one did.
