SRF Black Brisket, on the Egg last night at midnight. The pan is 18x13 - she was almost 16lbs before trimming.
She's holding steady now at 250, despite the fact that my gasket is almost completely destroyed. Firmly in the stall now.

Given the speed with which I have had recent briskets run, you may be closer to the finish-line than you think. Regardless, great eats await. When did they start coming in those fancy mesh bags?

There isn't any left - it did not last long. Sorry I didn't get shots of the end result. I sliced it, went to slice the ribs, and the brisket was gone. All 16 lbs (or whatever's left after 3 lbs of fat rendered out).
I did get a few plated shots of the ribs though - did I mention we did ribs today too?

1. As mentioned, to make them easier to handle (with a handle)
2. Just to make them look cool
3. The primary reason: we were having issues with the brisket cryovacs tearing while in transit (thanks UPS). The mesh bags provide some "give" so other items in the cooler could rub against the brisket, but the mesh allowed it to move around and not tear. We also increased the thickness of the cryovac.
Cook looks awesome...it's always a good sign when it's gone before you get any plated pics -
Noted on the bag, @SRFShane The last brisket I had the cryo was torn somewhere. Thawed it out and thankfully had it in the bag it shipped in and it leek we'd all over the place when i got around to it. Happened near the top seal cause the point was oxidized like a mofo.
Those things almost most need strapped down in the cooler !-FATC1TY
