Burned drippings in drip pan??

What do you all do to reduce this? I never really cared. But when I walk outside, I would like to smell bbq, and not burned drippings.
I am reluctant to put water in my drip pan, because the extra humidity I felt messes up my bark.
I use a plate setter, foil balls, and a metal drip pan with foil. I only run my low and slows at 250 dome.

I use 3/8 copper tees for plumbing under my pan

I use a similar set-up with the air-gapped pan (3/8" nuts) and have not smelled an issue. I believe @Mickey throws some sand (edit: see below, salt) in his drip pan to eliminate the burning-FWIW.Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.

Nice, I will give salt a try.
Maybe it's because for every low and slow, I fill all the way to the top of the fire ring. My PS sits directly on top of that. Very little room. Then about 1" gap between that and my drip pan.

Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers. -
How high is your lump bed? If you are full to the Platesetter, the heat that is directed at it will be a little (LITTLE) more intense than if the lump pile was lower in the box.
Salt works great. Sand is interesting...... Maybe, if you can, double up on the cheapo foil pans and double your air gap..... Just thinking....LBGE #19 from North GA Eggfest, 2014
