An afternoon with the egg... Cornbread, mashed potatoes, meatloaf

Had a few hours to play with the egg this afternoon... First up was cornbread in my cast iron loaf pan. Used the recipe on the back of the cornmeal bag -- even with extra milk and an extra egg, it came out a little dry. What other stuff do people like to add to cornbread? Thinking next time of adding some cheese and jalepenos...
Next was a few potatoes, wrapped in foil and roasted with butter for a few hours. Finally was meatloaf, I used 2 lbs 80/20 chuck and 1 lb of pork sausage. Roughly based on Alton Brown's meatloaf recipe, I used crushed garlic croutons (and half a bag of stale potato chips) for the breading. One got basted in BBQ, the other plain.

In corn bread I've done onions and jalapeños sautéed in butter, chopped broccoli, whole kernel corn, they are all good. I also substitute part of the milk for cottage cheese. That one trick does wonders in keeping the bread moist.Aledo, Texas

Cornbread, round two. Thanks for all your suggestions, everyone. I upped the butter, and added some corn and chopped jalapenos, along with cheddar cheese. Used heavy cream instead of milk. Into the CI loaf pan on the egg at 400. Took probably double the time of 25 minutes recommended on the bag. Nice crust, much moister inside, and pretty spicy!
