A Great Day for Short Ribs

I haven't cooked these in a LONG time. Smoked at 250 with pecan chunks to an IT of 185 and then put into a covered pan with a shallow Worcestershire sauce, beef broth, and butter bath for a 30 minute steam to finish. The bath makes a great sauce. These are the best shorties I've ever cooked.....they rock.

Great looking cook-brisket on a stick. Most eggcellent.Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.

The steam took a little longer than 30 minutes. The ribs still need to probe tender. The next time I do this, I'm going to pull the ribs at 190 IT and uncover part of the pan for the last few minutes of the steam to try and reduce the sauce a bit. I guess I can always reduce it on the stove if I need to.
The sauce from the bath really sent these ribs over the top.
