All the pics of these Ribeye Cap Steaks are making Costo call my name! BUT , I am wondering if I can just get a cryo whole prime ribeye and just cut my own cap steak off of it. I was thinking about breaking it down into cap steak , beef tips , and ribeye fillets. Any thoughts or suggestions ?
More meat please !! :-)

Well thought out plan. Go for it. I myself am far too lazy to do so. These being readily available, at Costco, I just like buying them and cooking them."Knowledge is Good" - Emil Faber

Which came first the chicken or the egg? I egged the chicken and then I ate his leg.

@SmokeyPitt - great video. Whole lot easier than deboning a chix...may have to give it a run. Thanks for posting.Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.

Timing is everything-have a four bone rib (choice) roast hanging around for a Sunday cook. So, inspired I gave it the knife as described above. Below is the salvaged rib eye cap. (picture quality a combination of operator and phone).
I will taste test it next week but I am pleased with the raw result.Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period. -

@XLentEGG and @NorthPilot06 - thanks. The proof will be in the taste test but given the relative ease of butchering, I am planning to " go for it" with every prime rib roast from here on out. I'm sure no one will miss the cut from the roast.Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.
