Looks wonderful! And curios what you used for fuel, I've read rockwood is good for baking. Just curious what you used and if it picked up any smokiness.

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

@feef706 we bake a lot of bread and deserts using Royal Oak. The smoke is very subtle. Unfortunately Rockwell is not available in California...Large BGE, Medium BGE, Kamado Joe Jr, 36" Blackstone Griddle Blackstone Tailgater and Roccbox owner/operator from Los Angeles

@amlucy2 - Recipe?...well...a little of this, a pinch of that. But roughly: I used a Pillsbury pie crust for simplicity. Rolled it out a little thinner and bigger so I could just fold over the edged. To the peaches (4 cups?), I added 1/3 - 1/2 cup of sugar, about 1 Tblsp of corn starch, 1/4 tsp nutmeg, close to 1 tsp of cinnamon, and a little bit of crushed vitamin c to keep the peaches from turning dark. On the egg at 375-400 at an inch or two above the felt line for 45-50 minutes.
@feef706 - I can't get Rockwood. My current go-to lump that I can get locally is Timber Charcoal. It rates really good and is very neutral. I didn't detect much smoke at all. Certainly tasted like it had been cooked outside, but not smoky.

That looks and is tasty from here. There is a peach orchard around the corner 1/2 mile or so. I grill their peaches for a desert. Baking a pie is beyond my talents, but I need to give it a go.Hood Stars, Wrist Crowns and Obsession Dobs!

@berndcrisp - doing a pie really isn't that tough. Give it a try. Sure, homemade pie crust is better, but the pillsbury refrigerated pie crusts aren't bad. Chop up some peaches, add a little seasoning and thickening agent (corn starch) and dump it in the crust.Large (sometimes wish it were an XL) in KS
