Gnocchi, Italian sausage, and squash

Made gnocchi for the first time - I don't know why I waited so long to learn about this heavenly little dumpling. I made a simple Alfredo sauce with cream and parmesan cheese. Then I used a little leftover pizza sauce another flavor. Paired them with some grilled Italian sausage and yellow squash. It was a treat that wasn't as difficult as I imagined it might be.

    they look excellent, gnocchi are incredibly versatile too, can substitute nearly any roasted vegetable for the potato to create different colors & flavors; root veggies & just about any type of squash in particular but you do have to account for the increased moisture of those to assure the finished product isn't too dense
