Ran to Costco. Apparently there's a vegetarian alert x 2.

It's all good. Buddy brought over some killer bread. Wish I had some better pics, most taken half way through eating.

I made a quick salmon brine as follows:

Threw about an ounce of pickling spice into a pan, roasted with some olive oil. To help make the aromatics water, not just oil, soluble, I poured in some alcohol. I could part the least with some grappa. A very good grappa relative to the previous variations I've experienced.

a disgruntled bar keep in an expensive italian place once let me drink the top shelf for free, cant tell you the names of the good ones...choose wisely

I have been using the recipe @egret had posted a while back. Although delicious, it is becoming mundane for me. Appreciate you posting it.
My Beautiful Wife "prefers" salmon on the BGE smoked with either pecan or sugar maple, every Sunday evening. Last night, we too, had some friends over. Good times.
It is odd, that now we have no access to a kitchen, we have not stopped entertaining friends and family with home cooked meals using the BGE only. I am constantly reminded of its versatility each time I use it.

Let me clarify the pickling spice/oil, then grappa addition was added to water and salt to make a 15% brine. I soaked for about an hour, then rinsed off the fish and threw on the grill indirect until it hit 125F in the thickest part of the filet. The egg was around 550F. The pineapple went on next, soaked in grappa, with the DP pineapple rub (also put a bit on the fish).

Also roasted some marash pepper and saffron in a pan with oil, added water and onions and cooked a batch of black beans and rice. Saffron is magical.

Because I was trying to throw this together at the last minute, I bought some prepared stuffed grape leaves and seaweed salad.

Zack made the bread - it was an artisan cheese and jalapano loaf and cooked on a stone in the egg.

Dessert was pie and ice cream.

Everything turned out great - I really like this technique for the fish. Took about 10 minutes to cook the fish.

Grappa - I've had some terrible grappa. This stuff was actually good. However, I'm not a big fan because of a previous incident with grappa, so I wanted to get rid of it and this batch had a very pleasant, fruity aromatic flavor, so I used it. A dark rum would have been my first choice. But I was very happy with the flavor profiles of everything.

A few years back we where in Italy and toured a grappa distillery and they gave us a taste of fresh from the still grappa to grappa aged for 15 years in wine barrels and the difference was amazing.

I've always wanted to try grappa but never sought it out. Now, maybe not so much. Love the way you used it though and the rum idea sounds good. Salmon at Costco has been really good lately, plenty of fresh sockeye.
