Honey Butter-Split Turkey Breast in Cast Iron

Wanted to share some pics of my latest creation from last night. Turned out to be one of the best things I've cooked so far, and now I have great leftovers for sandwiches for the rest of the week.
-Got a split turkey breast from Whole Foods with the bone still in (about $14).
-Melted about a stick of Kerrygold butter with a few tablespoons of honey.
-Brushed the honeybutter all over the breast and seasoned with salt and pepper.
-Roughly chopped an onion, a sweet potato, and a few large carrots into large pieces so they wouldn't cook as fast and tossed them all in the rest of the honey butter with some salt and pepper and about six sprigs of thyme.
-Put all the veggies in a cast iron skillet with the turkey breast on top.
-Cooked indirect at 375 until the internal temp on the turkey was 165 (took about an hour and 45 minutes)
-Feasted like a medieval king

ON THE MENU!
One of my Egg regrets is that we've been away from home for the last several Thanksgivings and Christmases. No Rib Roast or Spatch Turkey on the Egg.
I did one breast once that was not all that great.
This is a perfect and fun looking any time of year cook. Thanks for sharing,
