I am becoming a meatloaf master.

OK, maybe I still need some practice, but tonight's effort turned out pretty good. I decided to not use a glaze on top to save some sugar and carb consumption. I used a light dusting of a carne asada rub and it worked fine. Cooked it directly in a pan because last time it seemed a little too smokey cooked on a rack over a drip pan, even though I used a drip pan and air space under the pan.
Served with a broccoli, raisin and onion salad and fresh sliced tomatoes. Included a dirty fork in the pic just because.

Cooked 350 dome temp to an internal temp of 155 then let it sit for about 20 minutes before serving.

Just mixed it all together and formed into a loaf, 350 indirect to internal of 155. The crushed pork rinds trick I read about somewhere and @Mattman3969 has given me a recipe using finely diced mushrooms in the meatloaf, so I'm gonna give that a try too.

I usually use a drip pan on the platesetter, raised with some balls of foil for an air gap, then put the meatloaf on the egg over the drip pan. Last time, even with an air gap, the drippings created too much smoke, so I cooked this one directly in the pan in the juices. I think if anything, once the meatloaf rested for a little while and then was removed from the drippings in the pan, it was fine, maybe even more moist than the other way.

So I did not take any pics, but today's leftover meatloaf sandwich was fantastic. Think I'll have another tomorrow!

Last one I made was SGH's recipe for meatloaf. Jimmy Dean sausage, ground beef, and crushed ritz crackers. An egg, and some improvising. Its in the 2 week rotation now. Family LOVES it lol...best thing about meatloaf is you have so many options and no 2 ever are really the same. Nice cook.
