First Hanger Steaks

Options
Passed some hanger steaks in the case today and remembered my wife was craving a fresh summer steak salad.  Cranked the egg up on high and loaded the cast iron. 

Made a mustard vinaigrette and prepped some fixings. (Blue cheese, red onions, cherry tomatoes, chive butter)

Seared the steaks a few min on each side and sliced into medallions. 


What a great cut of beef!!  Huge beef flavor with only salt and pepper, super tender and juicy. Like a skirt steak but thicker and easier to manage on the grill. Will be purchasing again soon!
