Toronto's sandwich

Just found out the mayor of TO named peameal bacon sandwich Toronto's sandwich. What a coincidence, although mine is a Banh Mi version.

Smoked a piece of peameal bacon and a previously-SV turkey leg roulade (per Chefstep's recipe https://www.chefsteps.com/activities/turkey-roulade ). Added a small hickory chunk, indirect 350F till IT 150'ish. No pic of turkey on the grid.

Dressed with pate, mayo, pickled daikon-carrot, spicy mustard, scotch bonnet sauce, cilantro...

btw, our small freezer died two weeks ago, glad I caught it before contents fully defrosted, including this uncooked peameal bacon and turkey leg roulade which I re-froze. Should know by tomorrow morning if they are safe?

Looks great. Eat it while listening to Drake and watching a Jays game. Couldn't get much more Toronto than that.

@canugghead good to hear the semi frozen meats didn't kill you (although that pea meal would be cured enough I bet it could sit on the counter overnight and be fine). That turkey leg looks great. Was there a thread with directions?

Great looking sammi. With all due respect to the Mayor, I thought the Clubhouse was "Hogtown's" sandwich, on second thought, maybe peameal bacon is more appropriate....

Sounds like a great combination of flavors. This Kentucky Hillbilly never heard of that bacon name before....maybe one day, I'll get to a place to try it !!!!!
