As the title implies, I have too many food pics on my phone and need to winnow some down before going on vacation next week. So here are three pretty quick midweek cooks I've knocked out in the past few weeks.
Pork tenderloin is a great midweek cook. Lots of things you can do with it, tasty, and relatively cheap and healthy. Since my in laws were in town, I cooked two; one dusted with Oakridge Secret Weapon and the other marinated in olive oil, balsamic, salt, pepper, grated garlic, and chopped fresh oregano. Did them raised direct until I got an IT of about 147, which is a bit further than I usually take them. I've gotten my wife to be Ok with pork that's a touch pink, not so much with the MIL.
Served with beans and roasted cauliflower.

While the in-laws were here I also did a huge batch of chicken thighs, which are really one of my favorite things to eat. I dusted a few with Mango Chipotle rub and Caribbean Jerk rub (for me) the majority with Santa Maria style rub. Again, did raised direct until about 170.
Served with a bagged Caesar salad, and corn grilled on the gasser.

I know everyone raves about spatched birds, but there is still something about a straight up roasted chicken. I use the same process I do in the oven - about 435-450. Preheat a CI skillet in the hot egg for about 20 minutes, and then drop the bird in. The bird was seasoned with straight s&p, and stuffed with lemon, fresh rosemary, and fresh thyme. Done when I got a temp of 161 in the thickest part of the breast, pulled and let rest for a bit.
Served with roasted broccoli, and eventually some garlic bread ended up on the plate as well.

Finally, I work from home twice a week. That let me throw this little half butt on. I started a bit too late, and SWMBO was hungry when she returned after actually going to the office, so it ended up more chopped than pulled, but still good eats.
Served with roasted broccoli and buttered noodles.
