Just got home from a trip to Mexico... I felt like tacos!

After a one week stay in Mexico, I watched the old Mexican woman pressing corn tortillas and was fortunate to get a few cooking pointers.
Today I made fresh home made guacamole, pico de gallo, corn tortillas and a Mexican inspired Quinoa salad. I had such a good time in Mexico with all of the fresh food, this is as close as I will get until my next trip.
The meat was flank steak, butterflied and marinated in my fresh mojo for 24 hours. cooked at 375 indirect and then seared to finish. Love the pink colour the meat takes on from the marinade.

Looks good! It's hard to find a taquerias (in the states) that make their own tortillas.. The few that do are really good.MM & XL BGE, Bay Area CA

Don't know about where you live....but can't find any decent Mexican around where i live. Would love to learn and adopt some of their knowledge and methods. You have done quite well there. Stupid question.....they had Cholula there?Ellijay GA with a Medium & MiniMax

Making my my own has been a great experience. The fresh tortillas were the best I have had to date -

Great cook... and great use of one of the best hot sauces around (I love Cholula). In fact, I love it so much that I buy it by the half gallon and burn through it about every 6 weeks!

Just finished making tortillas using a TAVA on a XL-egg and pressing very thin using a press from India. I have several metal presses but the Formica surface on the press I am using make really thin and round tortillas.
