New Large Big Green Egg Owner

We've had the LBGE for a week now and made some of the best ribs we've ever had and then a pizza last night.  Wow this is going to be fun!!!  Looking for something to go low and slow with, any suggestions?

    Easy and most forgiving piece of meat would be a Boston Butt.

    Hi, welcome.

    Pork butts are surprisingly easy. The generally come out better the bigger they are, 7 - 8 pounds is good. If you cook at the top end of the temp range, 350F, takes about an hour a pound, sometimes less. At the classic 250F, 12 - 16 hours. In which case you need to be able to hold the temp fairly steady for that amount of time.

    FWIW, a guy I used to work with thought an Egg was too expensive, despite my encouraging him to get one by feeding him samples. He eventually found one on Craigslist. His 1st cook, his wife told him, "Your best ribs ever." After that, she told him to stop bringing home pulled pork from a nearby pit because his was as good, or better, not to mention less expensive.

    @bradleya123 You did ribs, so you understand temperature control at low temps. 

    Go big. 

    Get a 3 or more bone in prime rib, and cook at 225-250 indirect. Simple salt and pepper rub.  Does not even need any smoke added to keep things really simple.  It is technically low and slow, but not a long cook. Actually it is one of the easiest. 
    You will be blown away.

    2nd. Go with a Boston butt. Very easy and delicious results. I've tried it both turbo and low and slow and both were great. The low and slow gives you a better crust if you have the time.

    And give the UNC guys a break. They have a long history of academic excellence among their athletes dating back to at least 1981 when senior Al Wood said on television "Sometimes it just bees that way" after a loss to Duke - 2 months prior to his graduation.

    I've heard (from Steven Raichlen) that beef plate ribs is brisket on the bone!  I know I wanna try and think it'd be easier than a whole packer since you're new. Regardless, have fun, post pics, and no such thing as a dumb question as long as you've read previous threads!

    @bradleya123, welcome from a Gilbert Adams resident freshman year and an overnight resident of K-Ville.  

    I graduated thanks to scholarships,  financial aid, and loans.  The stereotype I see repeated in the media seems like it was invented by an alien. Yes there were rich kids and poor kids but what mattered most was how smart you were. 

    Day 1,  I did not care about college basketball.
    Today my favorite resume accomplishment -  "Most creative sign of the weekend" made while camping out for a a Duke-UNC game.  USA Today, Sports section, left side front page weekend news tidbits column. Above the fold.
