    Um. Yeah. A lot of it.

    I'm not proud of this. 

    But if this sausage tastes anywhere near as good as what Centex and @20stone made last time it will be worth the shame and humiliation. I guess.

    Well, when you say it like that it sounds unseemly. What we are really doing consummating our rendesvouz from this weekend where we shared a trailer and...oh never mind.

    By chance is this the same sausage recipe as what you had at Salado?
    If so that was the best if have ever had!

    I'm told that is one of the sausage varieties that got made in my absence. (That sounds better).  And yes it was outstanding.

    This was posted in the throwdown thread, but I'm posting it here again just to make things complete. 

    The he head of our porcine friend was brined Friday night then loaded into Cen-Tex's karubecue dishwasher smoker Sat morning. While the bunch of us were toiling away, the kbq did its thing and we ended up with this:

    fugly as all get out, but good lord was it tasty! Picked some chunks of fatty meaty bits and slapped them on a tortilla. Good eats before I hit the road.

    I cannot confirm nor deny that picture exists and I certainly would not attribute it to any single person. IF it gets posted, it could be one of any number of people. Allegedly.

    That was actually the green goddess salad from Modernist Cuisine. Pretty good stuff
